Friday's Fare: Crockpot Country Veggies with Smoked Sausage

I hope you've had a good week! Yesterday was my birthday though it lacked a bit of fanfare due to my son and I both catching colds. Instead of celebrating we went to the doctor and snuggled in the big chair in the livingroom playing Cut the Rope on my iPhone. If you or your children haven't played Cut the Rope, you should try it out! It's a super cute and fun little puzzle-type game where you feed candy to the sweetest-looking little monster. (and it's available for just about every device - PC, Android, Kindle Fire, iPhone, etc.) I don't enjoy being sick, but I sure do love having a bit of good snuggle time with my boy. 

Today's recipe is a great one for days when you want some old-fashioned country style food, but don't really feel like doing a lot of cooking....which I wanted today since I didn't even feel up to going out to a restaurant. Enjoy.
 
 
Crockpot Country Veggies with Smoked Sausage

4 potatoes, scrubbed and cut into 1-2" chunks
2 cans whole or cut green beans, undrained
2 lbs. smoked sausage, sliced into coins
fresh ground pepper

Spray crockpot with non-stick spray, then add potatoes for bottom layer. Sprinkle potatoes with fresh ground pepper to taste. Pour 2 cans green beans with liquid over the potatoes and spread to cover. For top layer, add smoked sausage coins. Cover and cook on low for 6 hours. 

As the sausage cooks on the top layer, the juices trickle down onto the green beans and potatoes adding great flavor to the veggies!
