With the additions of lemon zest and scallions, this one fits the bill!
Summery Mashed Potatoes with Scallions
adapted from here
5 (4" long) yukon gold potatoes, scrubbed, roughly peeled and cut into 1/2" dice
1/2 c. whole milk
3 tbsp. unsalted butter
1 scallion, chopped (green portion only)
3/4 tsp. salt
fresh ground pepper
zest of 1/2 lemon
Place potatoes in a large pot, cover with water, top with lid and bring to a boil on high heat. Once boiling, remove lid and reduce heat to medium. Simmer for 15 minutes or until potatoes are tender.
Turn off burner, remove potatoes from heat, drain, and return potatoes to same pot. Mash with a potato masher.
Warm the milk and butter in the microwave for 40 seconds. Add milk and butter to potatoes along with scallions, salt, pepper, and lemon zest. Stir to incorporate well. Top with extra butter and enjoy!
