Ever make homemade pizza? I never had until this past year. Delivery pizza prices seem to keep rising, and somewhere along the way I just lost my desire to make a phone call and have a random stranger ring my doorbell and deliver dinner. Ha. That probably sounds good to some people! Random strangers bringing me dinner? Score!
Well, if that's not your cup of tea or maybe you live where outside of your favorite pizza joint's delivery zone, I have a recipe for you. It may not photograph well, but oh is it delicious! The crust is on the thin side and flaky, with a great flavor. We enjoyed it so much that we had it twice in one week! (which is another reason I need an exercise class!) Enjoy - your family will thank you!

The Ultimate Pizza Crust
(adapted from here)
For the Crust:
2 c. all-purpose flour
1 tbsp. sugar
1 tsp. salt
1/2 c. unsalted butter, cubed and chilled
2/3 c. warm water
1/2 tsp. instant yeast
1/4 tsp. cornmeal
In a large bowl, whisk together the flour, sugar, and salt. Add the cubed, chilled butter and using a pastry blender or your fingers, work the butter into the flour mixture until it is mostly incorporated and looks like coarse sand.
In a measuring cup, combine the warm water and instant yeast. Add to the flour mixture and use a fork to combine until the mixture is evenly moistened.
Turn out dough onto a floured surface and knead for a minute or so until the dough comes together and is smooth. Shape dough into a ball, cover with a damp kitchen towel, and let rest for about 30 minutes.
Preheat oven to 450 degrees.
Sprinkle 1/4 tsp. cornmeal onto your desired pizza pan and spread evenly. Take the dough and place on center of pizza pan. Using your hands or a rolling pin, gently press the dough out into a circle a slightly thicker than 1/4". Take care not to tear the dough. Prick the surface of the dough all over with a fork and pre-bake the crust for five minutes on the center oven rack.
Remove from oven and brush the crust lightly all over with olive oil. Top with desired sauce and toppings. We like Pastorelli Pizza Sauce.
Lower the oven rack one level. Return to the oven for up to 12 minutes, or until the cheese is melted and begins to brown.

ReplyDeleteI have been so hungry for pizza. We steer clear of the purchased ones due to the sodium (husband's issues). I bought a pizza crust yesterday, no, day before, thinking maybe we could have that - but I think your recipe sounds so much better.
