A lot of people are eating cabbage this time of year. I personally, am not a big fan of most cabbage dishes. One thing I do love, however, is coleslaw. The creamy, sweet, mayonnaise-laden type, similar to what KFC serves. This recipe isn't exactly like theirs, but it's still very good and super easy to make. The full recipe is at the bottom of this post.
Start with a package of the shredded cabbage and carrot coleslaw blend sold with the bagged salads at your local grocery.
I like my coleslaw to be in little bits, so I chop up the shredded bagged cabbage and carrots some more.
Sugar, salt, mayo and pepper are all that you need.
Sprinkle on the dry ingredients first. Then spoon dollops of the mayonnaise over the top, and gently stir all to thoroughly mix.
Chill for about an hour. The mayo breaks down and becomes that sweet and creamy consistency that is so good!
14-16 oz. package shredded cabbage and carrot coleslaw mix
3 tbsp. sugar
1/2 tsp. salt (I use less)
1/4 tsp. pepper
3/4 c. mayonnaise
If desired, chop cabbage/carrot mix into smaller sized bits. Place in bowl. Sprinkle with sugar, salt and pepper. Toss gently. Stir in mayonnaise, cover and let chill for about an hour for flavors to meld and creamy consistency. Stir again before serving.
